Ingredients:
3/4 C. mayonnaise
1/4 C. finely chopped cilantro
1/4 C. chopped celery
1/4 C. chopped shallots or red onions)
2 tsp. Tabasco pepper sauce
2 tsp. Dijon mustard
1 tsp. white vinegar
1/2 tsp. salt
1/4 tsp. sugar
2 lb. red potatoes, cut into 1/2-inch cubes and cooked
Directions:
In large bowl, combine all ingredients except potatoes.
When potatoes are cooked and have cooled, mix with dressing.
Cover and chill to blend flavors. Add more Tabasco sauce, as desired.
