Happy Thursday!

Wow, this week has flown by!  I am working from home - and I love it!  My work has only gotten busier during this time, which is good that I am busy - but a little chaotic at times. My days are packed with Zoom and WebEx meetings, chats and calls through Teams and just keeping-up with the regular work.  The good news is that we have gotten two more large contracts, which will keep us busily employed.  I am so thankful we are a team that can easily work remotely - and we were all set up (and used these tools) before the crisis.

While I am at home, I have not been doing a lot of clothes shopping but I have still been buying the essentials.  Here are just a few of the things I have bought.

I heard last night on the news that it is "Black Friday in April".  And, it is really true that stores are running amazing sales.  They are trying to stay in business - and sell off their spring stock that isn't moving as quickly right now.  I am sharing some great deals above - and some more in my list below.  How cute is that striped sweater that is 60% off?  And, I love both of those jeans - the straight leg jeans - and the button front ones, too.

I watched this documentary about the designer Dries van Noten, which I really enjoyed.  I love watching the creative process of a designer.  

I also finished watching Making the Cut - the Heidi Klum and Tim Gunn spin-off of Project Runway.  I have to say at first I was not impressed - and almost stopped watching it - but it got much better.  

And, my last recommendation is Scatter My Ashes at Bergdorf's. It was all about the iconic store (its windows), fashion designers, the buyers, how much sales associates make in commissions in a year (let's just say - it is a nice living), and I loved the commentary from one of my favorites - Joan Rivers.

I wanted to share my favorite "power bowl" salad recipe.  This salad has quickly become my "go to" salad for lunch.  I love it so much - I look forward to lunch!

MY FAVORITE POWER BOWL SALAD

• Lettuce: a mix of finely chopped kale, green leaf lettuce, and radicchio 
• Quinoa (I use the tri-color one.)
• Dried cranberries and cherries (I've linked my favorites - by far, the best!)
• Nuts: Sliced almonds and walnuts
• Roasted butternut squash (optional)
• Black beans (optional)

I toss the salad with two dressings - the power dressing and a vinaigrette.  And, sprinkle with a little salt and freshly ground pepper.

Power Dressing: 1/8 cup rice vinegar, 1/8 cup olive oil, 2 carrots, 1/4 inch fresh turmeric, 1/4 inch fresh ginger, 1/4 tsp salt, and 1/4 tsp white sugar (optional).  Mix in a food processor or blender - until finely pureed. I can't wait to use my new mixer that I just got to make the dressing. (If it is too thick - add a little water or additional oil.)

Vinaigrette dressing: 1 part apple cider vinegar to 2 parts olive oil, and salt and pepper

My Favorite Chocolate Cake Recipe + Best Sales

I am sharing my favorite chocolate cake recipe today.  This is by far the best chocolate cake.  It is very easy to make, and doesn't take long to put together or bake.  I love it so much that I have made it three times while quarantined at my house during our "stay at home" order.  It is great served with ice cream - caramel sauce - or even on its own.

One thing I have realized during this time at home is that I love to bake.  My husband does most of the cooking, but I do the baking - both desserts and breads.  I am so thankful that we share in the cooking responsibility - it has made life a lot easier!  Later this week, I plan to share some of the healthy meals we have made from scratch.

MOLTEN CHOCOLATE CAKE RECIPE

4 ounces semi-sweet baking chocolate (I use this chocolate.)

1/2 cup (1 stick) butter

1 tablespoon Cabernet Sauvignon

1 teaspoon Pure Vanilla Extract

1 cup confectioners' sugar (I don't use the full amount.)

2 eggs

1 egg yolk

6 tablespoons flour

1/4 teaspoon Ground Saigon Cinnamon

1/4 teaspoon Ground Ginger (optional)

1/8 teaspoon Ground Cloves (optional)

Preheat oven to 425°F. Butter 4 (6-ounce) custard cups or soufflé dishes. 

Microwave chocolate and butter in large microwavable bowl on high 1 minute or until butter is melted. Stir with whisk until chocolate is completely melted. Stir in wine, vanilla and confectioners' sugar until well blended. Stir in eggs and yolk. Stir in flour, cinnamon, ginger and cloves. Pour batter evenly into prepared custard cups.

Bake 13 to 15 minutes or until sides are firm but centers are soft. Let stand 1 minute. Carefully loosen edges with small knife. Invert cakes onto serving plates.  (I only bake mine for 8 minutes. My oven bakes fast - and I like them to be very molten in the middle.)

My Five Favorite Hair + Beauty Products

Today I thought I would share my five favorite hair products, as well as some of my favorite beauty products.

As far as hair products, I have found that shampoos and conditioners make a big difference with my hair.  One thing that I have changed is rotating the hair products I use and mixing in new ones. Since I have been doing this, I have had the healthiest hair - and it has helped it grow.  I was even able to go an entire year without having my hair cut. My stylist was so impressed with how healthy my hair was. My hair didn't even need to be cut, other than to re-shape the cut.

MY FIVE FAVORITE SHAMPOO + CONDITIONERS
I love the smell of this shampoo/conditioner - it smells like the beach!

Five Amazon + Walmart Purchases During Quarantine

If you are like me, you have made a lot of purchases at Amazon and Walmart during your "Stay at Home" quarantine.

Amazingly, most of the regular things I buy have been in stock.  There are still some items that I wonder if they will ever be available again.  I am sure one day they will, but for now, I am using alternatives.
