My Favorite Power Bowl Salad + Most Popular Items

I wanted to share my favorite "power bowl" salad recipe.  This salad has quickly become my "go to" salad for lunch.  I love it so much - I look forward to lunch!

MY FAVORITE POWER BOWL SALAD


  • Lettuce: a mix of finely chopped kale, green leaf lettuce, and radicchio 
  • Quinoa (I use the tri-color one.)
  • Dried cranberries and cherries (I've linked my favorites - by far, the best!)
  • Nuts: Sliced almonds and walnuts
  • Roasted butternut squash (optional)
  • Black beans (optional)
I toss the salad with two dressings - the power dressing and a vinaigrette.  And, sprinkle with a little salt and freshly ground pepper.

Power Dressing: 1/8 cup rice vinegar, 1/8 cup olive oil, 2 carrots, 1/4 inch fresh turmeric, 1/4 inch fresh ginger, 1/4 tsp salt, and 1/4 tsp white sugar (optional).  Mix in a food processor or blender - until finely pureed. I can't wait to use my new mixer that I just got to make the dressing. (If it is too thick - add a little water or additional oil.)

Vinaigrette dressing: 1 part apple cider vinegar to 2 parts olive oil, and salt and pepper
